I'd suggest trying out the Varnish mailing list. They should be able to help. You also might try checking this repo out, which shows more mor detail about how I've done things:

I’ve got a question. When I’m starting Varnish with exactly the parameters I put in my /etc/default/varnish it starts perfectly and runs, as expected, on port 80. But when I’m using the init script Varnish always listens on port 6081 as in the default configuration which I definitely changed.

Any ideas on that? I’ve almost given up. I’m on Ubuntu Server 10.04.1 with an OpenVZ kernel.
